This recipe is SO SO easy and SO SO good. I’m not lying!

Slow Cooker Salsa Chicken

What you need:

4-5 boneless chicken breasts
1 cup of salsa
1 can of black beans, drained (optional)
1/2-3/4 package of reduced sodium taco seasoning
1 can of low fat cream of mushroom soup
1/2 cup reduced fat sour cream

What you do:

Add chicken to slow cooker, aka crock pot. For some reason when I made this last week, I cut up my chicken breasts but it really made no difference in how the recipe turned out. Sprinkle chicken with taco seasoning. Pour salsa, beans and soup over chicken. Cook on low for 8 hours. About 30 minutes before serving, stir in sour cream. I’ve made this served with brown rice, yellow rice and even on top of tortilla chips. Good and Easy!

I didn’t have black beans on hand when I made it and splurged with the tortilla chips. I could have added some shredded cheese, too, but opted to keep it light.

Dumb and Dumber as we call them… although on second thought, they’re pretty smart…as always in the kitchen when I’m cooking.

HOW PHOTOS WILL BE JUDGED

* All entries will be uploaded into an album by Natasha Chalker Photography no later than Monday November 15, 2010, on the facebook fan page

* To vote for a photo you MUST be a ‘fan’ (or under the new facebook system ‘like’) Natasha Chalker Photography

* LEAVE A COMMENT for the photo you are voting for in the Natasha Chalker Photography album labeled ‘Fall 2010 Cutest Kid Contest’. ONE VOTE PER  PERSON PER DAY only but get your friends and family to vote, too!

* Photo with the MOST COMMENTS will be the winner. LIKES will NOT be counted, sorry.

* Natasha Chalker Photography will verify that all comments of the winning photo come from Natasha Chalker Photography facebook fans, comments from non-fans will not be counted

* Voting will close Friday November 19, 11:59pm CST

* Official winner will be notified and announced no later than Monday, November 22, 2010
